Why Olive Oil isn’t the best choice when frying

I convinced my mom a while back that using olive oil would be better than using those partially hydrogenated oil blends or corn oil. I didn’t know then that olive oil results in trans fats when used for cooking. I was disappointed to learn this.

From what I can tell, the best way to use olive oil is in salad dressings or mixed into foods without cooking or after cooked. To cook without trans fats resulting, I’ve read that the best options are to cook with expeller-pressed extra virgin coconut oil (refined does not taste like coconut; unrefined does) or organic butter.
